I’m in the same categories you described OP, and go somewhere each year for my birthday solo.
In the last few years I’ve done Boston, Key West, NYC, Los Angeles, Iceland, and Cancun.
Any of those were good choices as they mix in anything you may be looking for .
Summertime, I’d go to key west, the vibe there is so chill and relaxing, I’m not a beach person so I just drank and ate and hung out
