Paso Robles and the Central Coast

Looking for advice on Paso Robles and the Central Coast wine country.
I ordered my tickets for the UCLA game on Labor Day weekend. The original plan was to go to the Napa Valley for a few days, then drive down the Pacicic Coast Highway to Pasadena , but we have made some version of that trip several times before.
Instead we are considering Paso Robles. Although we have been to the parts of the Central Coast along the Pacific Coast Highway, we have never been to Paso Robles and the surrounding wine country. It looks like a nice vacation spot, it is closer to our destination, and will allow us to fly round trip to and from LAX.
Good idea?
Looking for advice on wineries, restaurants, places to stay, things to do.
Any suggestions would be appreciated.

Paso Robles is a great destination and a lot of people will recommend it over Napa for a more laidback atmosphere. I'd recommend an Airbnb near the town center so that you can walk in to town each morning/night for breakfast and dinner.
Calcareous Vineyard is awesome and has great wine and great views of the entire valley.
Firestone Walker is right off the 101 south of the town if you're more interested in beer. Tin City also has some great options of wine tasting rooms, a brewery and cider bar all walkable with good food options too.
We were able to Uber to and from locations, even the more out of the way vineyards but YMMV. It'll be hot as hell in early September but you could cut over to Cambria for an afternoon on the coast for cooler temperatures.

We went to Paso Robles in 2019 on the Saturday that LSU played Texas. The Eberle Winery is owned by an LSU graduate school graduate who played football at Penn State. He's an interesting fellow to talk to. His winery is great. We stayed in Cayucos which is a quiet beach town about an hour from Paso Robles. We watched LSU play Texas and at the same time watched 30-50 whales right off the beach from our balcony. We are going back soon. We flew into San Luis Obispo though. It was about a 30 minute drive from that airport. LA/Pasadena is at least 3 hours. Prequille Winery in Santa Maria is a little off the Paso Robles path but it is well worth a visit too. A drive up the coast to Big Sur is great. The restaurant Nepenthe in Big Sur offers an incredible view of the coast.

Biddle ranch vineyard in SLO is really nice.. If you are up for an easy hike (really easy) check out smugglers cave / pirates cove. for beer in SLO, central coast and libertine.

Hearst Castle is just over the mountains from Paso Robles and is an interesting tour. Santa Barbara is good to visit too. More wineries there and in the hills north and east (Au Bon Climat, Sanford, Cambria, Edna Valley, Foxen and many other smaller wineries).

BUMP for a trip report-
Paso Robles was the right choice.
We left on Friday August 27. The day before there were news reports of an unnamed tropical disturbance in the Caribbean which merited our attention.
We flew in to San Luis Obispo Airport which was about a half hour's drive from Paso Robles. We stayed at the Paso Robles Inn, a nice hotel right on the Town Square. It is in a perfect location, within easy walking distance to any place you would want to go in the small town, all of which were within a block or two of the square.
Favorite restaurants were BL Brasserie, La Cosecha, and Il Cotille, the latter of which is next to the Piccolo Hotel which has a nice rooftop bar. Taste Tapas Bar was a nice casual hangout.
We went to a bunch of wineries. Our favorite was Daou where we spent 4 1/2 hours one day. Excellent wines in gorgeous surroundings. We had a tasting, a short tour and a nice long lunch at Calcareous which was very pretty , as was Justin where we had wine on the Patio. Also had some good wine at Donati.
Then it was on to Pasadena. Stayed at the Langham Hunnington which is one of the nicest hotels I have ever stayed in . Had dinner outdoors at their Terrace Restaurant the first night then went downtown and had a very good dinner at Union Restaurant the night before the game.
Game sucked.
We were supposed to fly home Sunday but the flights in to New Orleans were cancelled. Ended up going from LAX to Las Vegas until Wednesday when we were able to get a flight home.
What would have been a wonderful vacation was marred by two disasters, the hurricane and the football game.
