re: Crawfish cleaning/purging set up.

While I've modified my boiling technique over the years, my prep technique has never changed. It's very simple and old fashioned and it always works.
1) Dump sack of crawfish into ice chest. Open plug on ice chest.
2) Spray crawfish for about 1 minute. Let water drain out.
3) When the water drain slows to a trickle or so, dump some salt into ice chest. Take your paddle, stir around the crawfish a little bit, dump a little more salt.
4) Plug ice chest, fill up about 2/3rds with water. Place the empty sack on top of the crawfish.
5) Drink a beer, start boiling water, season water, add potatoes.
6) When beer is finished, open up plug on ice chest, and spray water for 2-3 minutes, and then keep spraying until water runs clear in the drain (if they are pretty clean, by the time 2-3 min is up, water might be clear already)
7) When drain stops running, tilt chest to get remaining water out.
8) When ready to begin boil, take empty sack off top of crawfish, dump into boil basket, and away you go.
All of these $50 baskets are just an excuse to get you to spend money. This is old school... it's not hard.
