The Jews have been very protective of their culture, that's how they've survived, and that's meant largely marrying within the tribe.

Conversion was either undesirable, or unwanted, for most of Jewish history. And there were practical restrictions, to be a Jew, you mother had to be Jewish. Matrilineal descent.

One of the great revolutions of Christianity, was opening up Judaism to people who weren't part of the tribe.

It's also fair to say, the people we think of as Jews now, are the people who didn't convert, and didn't go completely native. They're the people who did continue to marry within the tribe. These are the people who have worked the hardest to preserve themselves.

The biggest, culturally, would probably be the no longer keeping kosher, changing the sabbath from Saturday to Sunday, and introducing the concepts of both forgiveness of sins while still alive, and an afterlife.

Judaism has no afterlife, and death is the only atonement for sin. Sin makes you mortal.
