Vail is not far from Breckenridge and they have an adventure park you access from ski lift
They have a neat alpine coaster, summer tubing, zip lines, ropes course, jeep tour, etc.
You can do it all day and they have food options as well

Went to a wedding in Vail in July about 10 years ago and it was so much fun. The day before we rented mtn bikes. Take the gondola up to the top and just bomb down the mountain. The weather was just perfect too.
They had the beginnings of the adventure park at the time - climbing wall, stuff like that, but I'm sure it's improved since we went out there.
Or you could just sit at the top of the mountain, drink beer and enjoy the views.
