I hope this message finds you well. In a recent discussion with Wife I told her how I'd read praises of the stuffed tenderloin from TulaneLSU of Tigerdroppings.com. Being as we reside at Exit 97 I told her we should have some samplings of the newest comer to the Great Boudin Mecca. Much to my delight she informed me that while running some errands yesterday she'd stopped by and gathered some items, bacon wrapped asparagus, some stuffed potatoes, and, thankfully, the spinach stuffed pork loin wrapped in bacon in which I'd read your praises. Sadly though, no boudin was purchased, I've discussed with her how this is unforgivable and she's promised to do better next time.

I arrived home yesterday evening and was hit with a fabulous smell as soon as I opened the garage door, I could smell the spinach wrapped in pork wrapped in pork awaiting in the oven. I asked Wife how long everything had been in the oven and was informed "about 45 minutes". I panicked a bit, loudly proclaiming "That's longer than suggested by TulaneLSU!". Fortunately things were not as overdone as I'd feared and we were able to enjoy a delicious meal and I reminded her that a gratuitous "thank you" is owed to you.

Kartchner's rocks and you have the free gun range just down the road. Makes for a great day trip within an hour of BR. Bring a big ice chest, guns and plenty of ammo.

What an absolutely heart warming delight to read your beautiful words, savor your delicious photo, and share in your first experience with that wonderful dish. Wife seems to be a good hearted woman -- one who cares deeply for your well being. Please forgive her for not getting boudin and cooking for 45 minutes. The bacon jacket and the cream cheese filling allow for some lenience in cooking time for those heavy on the oven. I was relieved and thrilled to read how the longer cooking time did not diminish the dish's excellence in any way.

Please give Wife my warmest well wishes and tell her to keep loving you by providing these most special of dishes. What a woman, and I think Mother would share in my high remarks about her.
