Wash the rings under cold water to remove the sugars to prevent burning
Batter is a powder mixed with milk. Different from the chicken. Powder could possibly be seasoned flour, maybe some corn meal? Maybe some baking soda or powder. Not sure. That recipe is likely the key, so tinker with it. Ditch the eggs
Batter/flour/batter/flour. Fry at 340 for 2 minutes, flipping at 1 minute

None of us really know but the thing that made the biggest difference for me was actually the amount of oil. I once fried some in the turkey fryer after the Thanksgiving turkey and it was very close in texture. Not sure if it's the peanut oil, the amount of space they had to do their own thing, etc
