Our family has always done a lot of home curing of bacon, hams, sausage, poultry, etc with nitate and have eaten literally tons of it. Our average age at death is 94 years old and is isn't from nitrates. I still have ten years to go and am looking for the right bed to get shot in.

Love it! As I said, just dealing with some allergy issues and also a bit of concern by some who eat nitrate and preservative free. Thank you fir the response!
