I did the food truck/catering thing for about five years before eventually burning out. I'll warn you about the amount of hours you'll be working as the owner/jack-of-all-trades, and that you can probably make a higher hourly wage and maintain lower stress levels working at McDonalds. Regardless, it was a great experience, and I have zero regrets.

If you're comfortable with all that then you should look for a bar that barely serves food and has all their paperwork current. We found and used two of these back in the day, and I'd guess it would be even easier to find now. You may be able to horse-trade your way into the kitchen if you offer to prep some quick serve stuff to keep the bar's customers drinking. You'll want to keep your funds fluid rather than tied up in any rent agreement. Get the health inspector out and make sure there are no issues with the arrangement before any money changes hands.
