I watch some of it most every day.
I think personable people that have experience running a panel type show is what I'd look for.
Maybe someone who hosts a news show. Do they have any people on news shows that just host, and don't argue?
A talk show host does most of the same things a game show host does.
People I could stand in the role from sports:
Chris Fowler and Rece Davis both have experience with hosting College Gameday, a show with multiple players they have to keep on cue time, etc. They were never the stars on the show.
Kay Adams does the same thing really well, on The NFL Network morning show Good Morning Football.
It almost has to be someone that will take a back seat to the contestants.

Trebek was great because he had experience hosting game shows, including at least one trivia quiz show. But he wasn't some huge household name, so he could let the focus be one the trivia and contestants while shaping the image of the new Jeopardy!.
I hope they don't draft some big celebrity gimmick host, because it would change the nature of the show. Never the less, Alex built it in to a much bigger gig than it was when he got the job, so the producers may feel compelled to find a big name.
