I would definitely do the wine pairing. You’ll get to try many different styles of wine that you normally would not get in the store. Also, the pairing totally elevates the meal. In January, we dined at Per Se, Keller’s NY restaurant, and it was outstanding. His “Oysters and Pearls” dish is amazing.

Let me break the trend here. When we went I took the money we would spend for everyone to do the pairing (or whatever your group wants to spend) and told the sommelier “here is what we want to spend on wine. This list is insane. But you have our budget. Take it away”.

It was awesome. Rather than have a different glass of wine per course (which can get tedious and doesn’t allow you to see how a wine develops) we had 2 bottles and 2 other glasses. It was great. Do this.

ETA: actually I think I gave them a budget of $600 for 4 people. We went for lunch. It was wonderful experience.
