Cajun Boiled Smoked Turkey

What’s up guys! With the holidays quickly approaching, I’ve been looking to turn-up the traditional roasted/fried turkey. I’ve been seeing these turkeys that are boiled in seafood boil. Then, they are smoked. Has anyone ever done this? I’m just looking for some timing and seasoning tips.

I wouldn't boil and soak. I would brine and smoke.

This Cajun dude now living and cooking in Needville, Texas is actually doing just that. Did it last year and sold out of turkeys.

I'll be trying this soon, I'll let you know how it goes. Undecided whether to boil it or brine it. I don't want to frick up the skin my boiling it, also I inject, so I don't want to make the meat more porous. How would you brine with crab boil? Any ideas for my concerns?
ETA:
I'm thinking for the injection 12 ounces chicken broth, 1/2 cup butter, 1 tablespoon liquid crab boil.

Right, I'm thinking i've settled on the brine.
For the brine:
2 Gal Water
2 Cups Kosher Salt
2 Cups Sugar
2 Lemons Halfed
A few cloves of garlic.
4/6 Tablespoon (haven't decided) Liquid Crab Boil
3 Tablespoon black peppercorn
If I brine with 6 tbls of crab boil, I might forgo the crab boil in the injection.

I feel like crab boil injection may be a little much. I would think your brine with 6TBS would be plenty.

If you want crab boil flavor on your turkey why don’t you buy the crab boil in a bag toast it up in pan use a spice grinder to make a powder and use that to coat the turkey.

I want to say Picnic Provisions in Nola does crab boiled, then fried chicken.
Not sure how they do it exactly, but it's absolutely delicious.

We like to throw a medium sized turkey in our crawfish boil once it's done in the spring. Never took any extra steps but people seem to like it.
