After you make the sauce, dunk the parboiled pasta in the sauce and let it soak up some of that sauce. It will keep your ziti from being dry.


Also, about 15 minutes before you pull the dish out of the oven, add more mozzarella and parmesan on the top. That way the top doesn't over-brown and you get that nice soft bubbly cheese top.
