No Problem, recipe for the brine is as follows:

1 1/2 gallon water
1 1/2 cups Kosher salt
1 1/2 tsp. Potassium Nitrate----Saltpeter
7 Bay leaves
1 tsp. Ground cloves
1 1/2 tsp. All-Spice berries
2 tsp. Peppercorns
2 tsp. Mustard seed
1 1/2 cups white vinegar
3/4 cups sugar
8 cloves garlic minced

Put all ingredients in a large enough pot and bring to a boil while you trim the brisket. Let it boil for several minutes to get all the stuff well blended. Remove the pot from the stove, let it cool to room temperature and pour over the meat in a food safe container.

Place the container in your fridge and make sure it is fully covered in brine. Every day, flip the meat to make sure it is evenly brined. Let this brine for up to 2 weeks.

To cook, remove from brine and lightly rinse. Place the meat in a large enough pot and add enough water to fully cover the meat and bring to a boil. Cook until fork tender----usually 3+ hours.

I will use the thickest part of the brisket for corned beef and the tail piece will go on the smoker to make pastrami since the same brine is used to make both.


ETA: When I posted this I forgot to mention the size of my brisket. It is a good 14 lb. hunk of meat so you can downsize the recipe to the size brisket you are going to do.

Many briskets will be good if only using 1 gallon of water and then reduce all other seasonings a bit.
