Go on amazon, buy a 1000' of cat6, speaker wire, and whatever cable security cameras use. Once the electricians are finished doing their part buy single gang boxes and follow the same path they went with the wiring for your drops. Makes your life significantly easier - and get a rolling scaffold for the ceiling. I'd also recommend picking a spot to have a tech rack, as others have stated.
Run all your coax into this room as well. You can have your router and cable box setup there. Have the electricians drop 2 double gang boxes or more if you have that much tech. On our rack I have the kitchen & living room amps, night owl receiver/monitor, cloud server, router, cable boxes, and home security system on the rack. Makes life easy when something goes out.

So... if I run Cat6 to anywhere I want a camera, and Cat6 to anywhere I want a TV, and Cat6 to where my thermostat goes, I should be good?
I realize speaker wire to where speakers go.
And I guess I need to coax to where the TV's and modem go?
