If you are driving from Louisiana I'd say Carlsbad caverns wouldn't really be out of the way too much and it's amazing. Kartchner caverns is near Phoenix and cool as well.
Sedona as mentioned is a great visit, if you go there I highly suggest hiking Oak Creek canyon.
If you are hitting grand canyon you could go a bit farther north and hit antelope canyon as well.
Jerome is a cool old mining town that I hit occasionally when hitting wineries in cottonwood and page springs. It's just south of Sedona.
Tombstone is fairly convenient to hit if you are coming in to the state via the El Paso way.

Another vote for the Sedona area. And the drive up Oak Creek is beautiful.
