I have a DigiQ DX3from BBQ Guru. It has a fan and a control module. You set the pit temp for the control module (after placing the probe) and it turns the fan on and off to keep the grill temp steady. It works great. It essentially gives you pellet grill-like control over your temps.

BBQ Guru as a WiFi version of this, too, but it's more expensive.

I've got a butt on the grill, now, and just walked out to check it. The temp is holding at 225. For whatever reason, the 2 on the left is not showing up, but the temp is pretty rock solid at 225, and has been since 8:30 this morning.

I also have a Slow n Sear, which makes setup easier, too...

So you use the slow and sear and the digiQ?

How often are you adding charcoal?
