Invest in a good vent regardless. It is the most overlooked appliance in the kitchen. Everyone focuses on the oven and range investment, and they shortchange on the vent hood. This is critical in both keeping the house clean of smoke along with all the harmful particulates that release in the air. Crucial investment!

When I got my thermador stuff they had a great sale going on. Buy this and get that for free or for stupid cheap. I got the biggest (54” I think) vent they have with a remote blower motor. I absolutely love it. Sucks every drop of smoke out and it’s not defining. I heat my cast iron up in a 450 degree oven to hard sear after sous vide cooking and there are no smoke alarm issues. Buy once cry once....
