I’d be willing to bet they put in the tub surround after the Sheetrock. What it looks like to me is instead of installing the Sheetrock over the tub surrounds nailing flange they filled the big gap with Sheetrock mud. So, unless you re-do the Sheetrock over the mailing flange that mud will always crack. I’d go back with moisture resistant Sheetrock.

I had to use exterior paint to get mine to quit cracking. Bathroom ceiling paint didn't cut it.
