You need to go to Mt. Vernon and see that George Washington has a ice house. When the river froze in the winter they would cut blocks of ice and store them in the ice house and use them in the summer months. Actually made ice cream.

Thomas Jefferson also had a huge ice storage cellar at Monticello in Virginia. It was something like 20-feet deep and kept ice through the summer.
These were pretty brilliant and innovative people. A lack of modern technology did not cancel out their intellect and ingenuity.
