Thanks! I had a guy on another site tell me to look at Santa Ana close to the airport and Dana Point (as far as beach places go). I'll look at San Clemente also

Dana Point is a nice town and a good place to stay (I used to live there) but the beach is not great as there is a river (concrete ditch) that empties right at Doheny Beach. San Clemente Beach is nice and Laguna Nigel Thousand Steps Beach is really beautiful. Mission Viejo isnt a bad place just no beach but its very close to San Clemente. San Juan Capistrano is another place to look as its even closer to the beaches but right on I-5.If you have time, drive up to "Top of the World" in Laguna Beach. Its only about a 10 minute drive up from town and you can see up and down the coast and inland to the mountains. There is also a big park up there I used to mountainbike in.

We did that exact vacation last June. Stayed in Anaheim at the Fairfield across from Disneyland
Did a day in Huntington and dinner which was great
We also did a day in San Diego. You’re going to be using I5 for travel between DL and San Diego so id stay somewhere off it. Look at Irvine around the mall area called the Irvine Sprectrum Center. They have tons of hotels and restaurants where we ate one night and it’ll be cheaper than staying in a higher end beach town
From there it’s 78 miles to San Diego and 17 to Disneyland. Huntington shouldn’t be far either.
We also did a day in Universal and hiked the nearby Hollywood Sign which was awesome
