Am looking to do a prime rib Saturday and not sure what side dishes I want to do with it...got any ideas?

Depends if you want to go light or heavy with the prime rib.

Scalloped or Dauphinoise potatoes
Creamed Spinach - Easy
Asparagus (I like mine grilled or roasted)
Grilled artichoke

Some creamy polenta(corn grits),the drippings from the Prime Rib can be cooked down to make a wonderful sauce.
