You could be a project manager within an IT organization, if you spent a couple of years learning on the side.
Learn agile, scrum, etc. Work as a project manager on product development or web operations or similar team. Bonus: maybe find a remote position.

It sounds like you are essentially in an operations role?
It should not be difficult at all to go on Linkedin, Indeed etc and find thousands of operations job postings.
Don't limit yourself to just production plants / industrial. You can certainly start there but if you have shown you can operate something and manage people the job fields are limitless.
