I was shopping for one and noticed that many say that pay tv subscriptions like Netflix and Hulu are not or may not be supported. Anyone using one or know of one that will definitely display from iPhone to HDMI
television screen?

I'm struggling to think of a reason why you would want to do this. You can go wireless with a Roku or a device that supports AirPlay for $30.

I have no WiFi because I’m in a very rural area and satellite internet is all that’s available. I got rid of it because it was so slow. I do, however, have excellent cell service (full bars LTE all the time). Personal hotspot works, but it has very limited monthly data. Lightning to HDMI seemed like a good solution.

I got one years ago when I was traveling because hotel WiFi was sometimes spotty, and went to watch Netflix on the hotel TV... sure enough the bastard didn’t work.
I’d be interested to see what solutions you arrive at.

Depends on where you want to use it. WiFi on many offshore platforms doesn't allow streaming devices or make them difficult and don't allow direct connections between devices via wifi for mirroring purposes.
I'm sure there are other options but that cable is simple.
