Nerds, Craft My Star Trek Lineup

I’ve always been a devoted fan of Firefly and Star Wars. The Last Jedi has made me jaded and bitter. After years of making fun of you Trekkies, please take this as my formal apology. I want to venture into your world.
I know who Kirk, Spock, and Picard are. That’s the limit of my Trekkie knowledge. Where should I start? Craft the ideal order of movies/series for me. I want to skip the boring crap and keep it fun. I don’t want to be proficient at Star Trek trivia, I just want to enjoy the highlights of a series you hold dear.
tl;dr: what’s the most fun order for a newcomer to watch Star Trek?

I've never gotten into the Trek movies because they're really just extended length tv shows. But I'd just watch tall the tv shows int the order they came out.
The Next Generation is okay but can be a bit pretentious.
Deep Space Nine has the best story line by far.
Enterprise is campy but fun.
Voyager is pretty good. I like the premise of this one the most.
Star Trek Discovery(newest one) I'm still withholding judgement on. It still just doesn't feel like Trek to me.

Same. Have always loved Star Trek. Just watch the series and movies (minus the Kelvin BS) in release order.

Watch the original Star Trek TV episodes, then get into Next Generation TV episodes.

I watched Shatner's original run last year and absolutely loved it. It's fantastic.

I have an unashamed fondness for Hercules the legendary journeys and highlander the series. Will I like Voyager or Deep space 9 more?

Voyager takes place on the startship “Voyager” that is stranded all alone on the complete opposite side of the galaxy 75 years from earth and they’re journey back.
Deep Space 9 is the story of a space station run by the federation on the edge of Federation space. There is an entire military/political/religious plot arc that is told over the course of the entire series, with a lot of filler episodes thrown in of course. It’s different from other Trek series which don’t really have an overarching plot to them.

Most long term Star Trek fans like myself (I'm in my mid 50's) like Trek because it is a more cerebral show that is character and story driven. IMO the best Star Trek episodes had very few special effects....If you are looking for "fun" with special effects and space battles I can offer you specific episodes from various serious.
The Original Series is a must because everything Star Trek has become all started with the original series. I personally think the stories still hold up well.
If you want space battles, the last 2 episodes of Deep Space Nine Season 7 should fill that need nicely

If you want to get a fun Star Trek intro, watch a few episodes of the original series- there's a level of 60's fun that just isn't present in a lot of today's sci fi (and actually not too dissimilar from Firefly).
Go with the pilot, a few Mudd episodes (Tribbles for sure), and some other things like that. Balance of Terror is good to introduce the Romulans (quick note, the Klingons were opponents and nasty, but not actually at war with the Federation. Most conflicts had to be defused using diplomacy, to avoid escalating stuff. The Romulans, on the other hand- they WERE at war. Had to have the Neutral Zone, about like the DMZ between the Koreas).
After seeing enough episodes of the original series to get a good feel for things, watch Space Seed, where they come across Khan Noonian Singh, a genetically engineered "superman" from the late 20th Century, cryogenically frozen and adrift in space.
Then, go ahead and watch the movie Star Trek II, the Wrath of Khan. It's okay to skip Star Trek The Motion Picture, as II does fine in laying the ground work.
You reprise the same characters from Space Seed, with the same actors. It's about 15 or so years later. The effects are as good as any from that time period (certainly on a Star Wars level), and it's a great story.
At this point, you should know whether you're going to like the universe or not; I suspect you will. And then, you're good to explore at your leisure.
