Mountain Bike Recommendations... Medium to Aggressive Trails

(first time posting, I searched and didnt see anything on mountain bikes in a while)
Im buying me and the wife one for our anniversary.
I'm thinking about pulling the trigger on a Specialized Camper carbon fiber full suspension for me. And a Giant Talon 2 hardtail for her. Yea im spending more on my stuff dont judge me
Any thoughts on either of those? Or what you would choose/ride? The only two things im dead set on is that i'm getting full suspension, dropper seat, single sprocket (for me) and not a Trek.
Also, i'm 6'1/180lbs, and the bike shop I like says I need to go a 29er (thats what I have now) but a number of people are telling me that 27.5s are getting more popular bc of how much more agile you can be on them and are better for faster/aggresive trails.

The rock hopper is two sprockets and hardtail right? I dont want that many gears, just less that can go wrong and I'd like a full suspension so it's easier on my back. My wife is 5'2 so she cant really do a 29er.

are you a beginner? I wouldn't get a full suspension bike. you want to learn how to cut like a knife through the trails. You are going to have a lot more fun on a front suspension bike.

29ers look retarded. I like 26. More agile. Hard tail. Honestly, you won't be hardcore enough to drop thousands on this rig. I see people all the time get the bug, spend a few thousand, then on to another hobby in a year. Get a $600 Trek and reevaluate in two years.

Local bike shop got a Specialized Camper that was completely decked out in on consignment two days go. Barely anything on it is factory. Fox shocks in the front and rear, big shimano upgrades on the components, shorter stabilizer, next handle bars, graphite rims (27.5), bumper seat that doesnt have just the three levels but can adjust to any height. Thats just what I can think of off the top of my head.
Owner of the shop said it was a $2,400 bike new and at least $2,500 in upgrades. The guy selling it really needed money and I got it for $1,700. Im super pumped. I would have went with the front suspension but I just couldnt pass this up.
Ordered my wife a Specialized Rock Hopper or Pitch, I forget which one. But the 2020 have single sprocket and dropped the price to $650-750.

I've been riding for 5 years now. Not getting a Trek was one of the few things I was dead set on.

I like that you can cut better through the trails for sure but I wanted full suspension for comfort. My back has been out and every little bit helps. I figured dropping from 29 to 27.5 will help with navigating the trails.
Hopefully my wife doesnt look up prices on the bikes and know that I got myself one that is a decent amount more than hers.
