Three turns out is a good starting point. After market exhaust, jet kits, etc. can change that but 3 is close. it may be 3.50.
Also, did you hook up a carb-sync kit and get the vacuum sync'ed up for both carbs? They usually come with 4 mercury gauges but you only need two.
New plugs and air filter should be helpful too.

The air filter actually looked good. I tried 3.5 but it seemed to get worse the further from 3 I got so kept it there. Haven't pulled carbs out yet but I checked for leaks with a propane torch.
Don't have a sync kit. My motorcycles are FI so I don't have the advanced tools for carb work.
