I think 10 psi and above is considered high pressure.

I've got two double jet burners. A bayou classic with a 30 psi regulator and a king cooker with a 10 psi.

I actually spoke to a guy at king cooker who told me anything more than 10 psi on a double jet burner was over kill and not needed. I didn't buy it so i tested both burners.

The guy was right. The 10 psi got a half filled 100qt pot boiling in about 15 minutes. So did the 30 psi.
