Not sure what I’m doing wrong. Gear level 500 but I keep getting in parties with people who have weapons that just saw through enemies like butter. How do I get weapons that powerful?

You can level up your control points and do your missions on harder levels. Your gear/Gun perks and mods can also help significantly...

Sorry in advance for the wall of text.
There are a few things you can do. Some of it takes a little grinding.
First, there are gear sets that get you damage perks. Fenris give you 10% Assault Rifle damage with one piece. There are some that give LMG, SMG, and Rifle. A quick google search can probably get you which does which.
You can also stack mods that give 2% Weapon damage. Another thing, pay attention to the specialties. One gives you up to 15% bonus on Assault...another LMG... another Rifle and so on. Sharpshooter also does headshot damage bonus.
Gear set perks can also stack damage. I like having Hard Hitting on mine (10% damage to Elites). I have a 95% damage bonus for elite enemies. Be careful with this, as Veteran (purple) enemies become troublesome.
However, with Title update 4 coming soon, they are changing the mod system. As it is now, only certain type of mods can be used inside the categories (offensive, defensive, and skill). For instance, in offensive (red), there is firearms subcategory, which get you damage bonus, and precision sub which will get you range. With TU4, any red mod will go into any red slot. So you can stack any reds, blues, or yellows in those slots. No more subcategories.
Also changing in TU4 is the specialization trees. You can unlock damage bonus for any weapon type from any specialization. However, only certain specializations get you the special weapon mod. For instance, in sharpshooter, you will be able to unlock 15% bonus for any weapon type but only the rifle will get you the optics with 45% headshot bonus.
