It’s a giant state fair/rodeo/live stock show/ concert all rolled into one. If you are bringing kids and don’t want to do the rodeo/concert at night then bring them early before crowds get big.
If no kids then hit the wine garden.

I agree with Hermit.
Inside the NRG center they have a huge petting zoo, and a bunch of live animals for them to see.
A tip for parking: Use the MetroRail and park at Fannin South (the furthest South lot the Rail goes to). After the concert/rodeo, EVERYONE is going to be heading North and the wait could be atrocious. It might take you 10-15 minutes to get to the South lot.
