There's nothing like a good Pho on a cold day, especially if you make it on the spicy side.

I spice mine with the peppers they give, I usually put 4 or 5 in then pick them out as the heat gets to where I want, instead of the Sriracha or chili paste. I like the color as is.

Same here, although I don't pick mine out. I eat them. Sriracha is a tasty addition though.

Oh, PBs aren’t a chain like you’d think, each one is owned by a family. A husband, wife, and daughter run the one in the East and they are very popular with the Vietnamese locals out here. Place is super legit.

Get the round eye on the side and add it after you season it, it won't overcook in the broth. My favorite cold weather food as well !

I pretty much used this recipe from Serious Eats: Serious Eats Pho
The only changes I made is I used beef neck bones and oxtails I got from our farmer's market from a local farm. Grass fed and all that jazz.
