We did this every year in college for my fraternity's "Luau" during rush week.
1. Kill pig.
2. Dig hole in the ground.
3. Start big arse fire. We used hickory since we had access to a bunch of it.
4. As the wood burns down, add in river rock. MAKE SURE THE ROCK IS DRY. Otherwise it can explode. Trust me here.
5. While coals are burning down, season pig with whatever.
6. Get a piece of chicken wire twice the size of the pig. Line with banana leaves if you can get them, otherwise we used cabbage.
7. Place pig on covered chicken wire, and carefully layer more cabbage/banana leaves around the pig as you wrap the wire over it. Secure the wire with ties so you have a tightly wrapped pig.
8. Drop pig in the pit on the coals. Layer on top with lots of wet burlap.
9. Cover burlap with a tarp (make sure it doesn't hang down and touch the coals).
10. Cover pig with dirt.
11. Drink beer.
12. ???
13. Profit and eat pig. We would let it go overnight and stay up all night drinking.
