anybody ever tried this? Smoked fish is delicious, and it seems that specs would be a decent, readily available fish to try it out on?

if not, anybody tried smoking any type of fish native to south la?

Speckled Trout may be too lean or delicate to take on a good smoke flavor. Fattier fish like tuna, salmon, or sea bass would be better.

i've smoked trout before. it tasted just fine but you need to handle them gently because they will break up on you. reds do better imo.

I've smoked mullet and mackerel. Don't think trout has enough oil but what the hell...give it a try and report back.

I have yet to find a fish that doesn't taste good smoked or grilled if it tastes good any other way.

Hell yeah love some smoked fish. An oily fish will smoke better. We do mullet, King and Spanish macks mainly. Makes the GOAT fish dip.

My friends do sheepshead this way. They smoke them whole, scored, then pick the meat. Use for lunch wraps and the like.

That fish is surprisingly good.

I have replaced mullet with trout in Donald Link's Smoked Mullet Dip recipe. Works just fine, but as mentioned, it is very delicate. Just sit it on a fine mesh or on a plate in the smoker.
