im not on shift work but i average 60-70 hrs a week at work. i go to 5AM crossfit every morning and also train in the evening, normally accessory work for my weaknesses in crossfit (but i am training for a half iron man in the evenings currently). granted im up at 4:30 and asleep by 9 or 9:30 every night and i have no life during the week. i also don't have kids so that helps some. my wife is an ER Dr. and her schedule is all over the place w/ no set times or shifts. its completely random every month consisting of day, evening, and night shift. only one weekend off. She also goes at least 5-6 times a week. it's all about what you are willing to commit to and do you have the discipline to stick to that plan. best of luck to you. but yes, it's very easily doable.
