Just be cognizant of the sodium content in some of these deli meats.

Key sodium study (that n=100k one) shows all-cause mortality lowest at 5-6g of sodium (table salt is only 40% sodium) a day. And that's not even on a high-electrolyte-flushing diet. There's some rough evidence that about 25% of population experience increased BP/hypertension w elevated sodium levels, but there has not yet been a good study controlling for other key dietary factors.

I wouldn't worry about the sodium. Also, there isn't a consensus on added nitrites and nitrates. I always buy without, but I've read that the added levels are not much different from eating a lot of celery. Dunno what's true or if we just don't know yet.
