Happy Easter everyone.
FBD is my last dark fruit Waxing Poetic while I grill this bad boy.
I am attempting my first standing rib roast. Kosher salt overnight in the fridge, blotted down this morning, kosher salt and pepper, then Dijon mustard garlic and herbes de Provence over charcoal and apple wood chunks. Hoping this turns out ok.

We're doing a standing rib too. I wanted to smoke it but it's fricking 34 degrees here today. Kinda takes the fun out of it.
