Oyster's Rockefeller - Antoine's invented it.
Original french fry po'boy w/ debris - Can't really be traced but any place in Nola with a good roast beef will have a good potato po'boy. I like Parasols and Liuzza's.
The sno-ball - Hansen's. That family invented it in the 30's.
