Personally, I’d try to get out of Vegas as soon as possible and I would probably skip the North Rim if you only have a week.
You’re missing Arches, Canyonlands, and Capitol Reef National Parks and it would be a shame that you made it that far without seeing those parks. Coral Pink Sand Dunes and Kodachrome Basin are two state parks that are worth the stop if you have the time and you’ll probably end up driving right past them.
I’d recommend going in October because the weather is nice and cool and the crowds are gone.

Can those be done in the two days I have allotted for the northern Rim? Does the fact I’ve never seen the GC affect the analysis?
Vegas is pretty much nonnegotiable. Going to have to trade pool and a show for some cabin/hiking time. Plus I’d a night with a friend I haven’t seen in almost 15 years at a sports book or craps table.
