Cheese. Lots of cheese. Otherwise, I vary with pepperoni, beef, sausage, onions and peppers mostly.
On a related topic, do you want your toppings on top of or under the cheese. I want them all on top so they get browned and crispy.

I put a light layer of cheese first, then the toppings, then more cheese on top. I don't completely cover the toppings with cheese though.
Answer to OP - mushrooms, preferably baby portabellos.
