There's a small fishing village called Howth right outside Dublin. In fact, I'd recommend staying there to do Dublin, it's only a 10-20 minute train ride and is pretty. Quaint, picturesque place you think of, at least when I last went 10 or so years ago. Wicklow is pretty and close. National park with ruins, nice scenery and meadows, parts of Braveheart were filmed there. Depends on what you want to see/do, really. Kinsale on the south coast is beautiful, but may be farther than you're thinking.

I second Howth. You can ride the train (30 minutes or so) and spend a day in the village. There’s an awesome cliff hike that allows you to experience the countryside and there are some nice pubs nearby. It’s a great place to get away from the hysteria of the city.

+1 on Howth. If the weather is nice, you can take the train to Greystones and walk back to Howth along the coast path. It is marked with a railing along the steeper bits, but it is not for those with vertigo or fear of heights. Howth village has a number of waterfront restaurants, too. Easy train ride.
If you’re into history, a short ride into the valley of the Boyne will get you to the Hill of Tara (ancient seat of Irish kings) and even better, the Neolithic passage tomb of Newgrange. Newgrange has an decent interpretive center with exhibits, cafe, etc, then you ride a small bus to the actual tomb site.
