Because the Star Wars name attached to anything will print money. Random Space Adventure Movie will not make as much money.

I mean, I guess Disney could invest a couple hundred million into a "blockbuster" Sci Fi, have the story revolve around beautiful effects and visuals, an adventurous rogue hero, have a smart and sexy heroine for him to be jousting with.

Oh, they did, it was called "John Carter". And it was actually pretty damn entertaining. A ton more fun than TLJ, and there were open storylines available for future films, both on Barsoom and in a romantic period of Earth history.
But it didn't make any money for the studio, so they canned it.

Star Wars on the other hand, they can slap the SW title and opening crawl with John Williams score on a Rejuveme infomercial, and they would make a shite-ton of money.
