where do yall get yalls sausage casings? just ask the butcher at your grocery?


I've used the grocery (Doricnac's in Metairie) before. This year I used the salt cured hog casings from Academy and the were just as good. Very convenient because I never know which week I'll kill a deer.

My grinder in a hand crank villa ware that cost about $30, with a stuffing funnel attached. Plenty for grinding half a deer in a day.

I've done 100 pounds of sausage in the last 3 days. My recommendation is that you just pick up the kitchen aid attachment for grinding. Buy a dedicated stuffer, I used the kitchen aid one and I'll never do it again. Once thing that will help if make sure the meat is frozen and chunked if you are dumb enough to do what I did.
