Online searching yields mixed reviews.

Is there a gold standard out there in sealing products?

What are you sealing it against? Wood, sheet rock, another piece of granite or marble bath tub/shower?

I see there's a test where you pour a couple of tablespoons of water on the countertop. If it results in a dark spot before 15-20 minutes, then the countertop is absorbing the water and needs to be re-sealed.

Typically twice a year. Depending on how heavy the countertop is used. More usage would need more applications.

I second that. Much lighter.
But seriously little to no maintenance.
