You haven't found the Korok that you exchange the seeds with? You first run into him around Karkariko Village (can't miss him), then at the Forest Stable, and then he just stays in the Korok Forest.

I'd recommend going for Stamina over Hearts typically. You're going to die regardless early on, and one or two hearts isn't that much of a help. A bit more stamina though lets you climb for much longer though. Definitely essential if you are going to conquer the towers.
