I would go 300 Win mag.
I am about as big of a 6.5 creed fan as anyone but I think on big game past 400 yards the nock down is gone. You can still do it with a creed but a larger caliber is more appropriate IMO.

If you take ammo availability into account, the 300 Win Mag is probably a better choice. But I've got a buddy that hunts elk and mule deer in Montana, Wyoming and Idaho every year. He's swears by the .300 RUM. I can't recall right now what the make of his rifle is, maybe Tikka, but it's not custom built or anything like that. He did get a muzzle brake installed and says it kicks like a .243. Put a fairly high end Zeiss scope on it and had long range turrets made for shooting out to 600 yards. He's a good shot but not professionally trained for long range shooting. His 600 yard groups are impressive. He's pushing a 200 grain bullet at 3200 fps. That round will definitely do the job at any range.

300 RUM is a beast, but its a barrel burner. Not that important for a strictly hunting rig, but it should be noted.
Another round to think about if the OP wants a custom rifle is 300 Norma Mag. The case is not belted like the 300 win mag or 7 rem mag so reloading is easier.

Thanks for the responses. For the record, I was just using moose, elk, etc as examples. I was just thinking of larger game. I guess I need to research the 300 a little more.
