Frankly I put more stock in the bread rather than how it is cut. Seldom have I seen hinged Leidenheimer.

If the shrimp or oysters are fried right, the lettuce is shredded, the tomatoes are in season and the mayo is Blue Plate you can slice the bread in two then use a counter flap or rising butt to hold it together and I'll eat it.

Yep. Great bread + shitty prep = shitty poboy.

Decent bread + good ingredients = good poboy.
