Cooked some pompano tonoght

Picked up some from rouses. I had never had it before tonight. I just cooked it like specks in a black iron skillet. I think I would prefer it over any fish I've had besides maybe cobia and tripletail.

It's right up there with triple tail for me. Only thing that tops those two is scamp.

best tasting fish i've caught and eaten.
recipe tip: bake in oven whole and don't over season it (salt, small amount of white pepper, little bit of garlic powder, and when it comes out give it splash of lemon juice.
also, leave the skin on it bc it has a great flavor

Phenomenal fish. One of my favorites. Last one I cooked on the grill, gutted and head on...scored lightly and bathed pretty good in butter and lemon with some lemon thyme stems. Was amazing.
