Help me design wiring system in new home

My job is taking us to D.C. Signed a contract on a new build townhouse yesterday. The model had a nice whole house sound system with four zones and individual volume controls. The company that did them also calls each buyer to see what/if they want anything.
I'm thinking four zones plus 5.1 surround sound using on wall speakers and two surround speakers. Two zones will be upstairs and two down.
What about cat5? I'd like to take this opportunity to cut the cord too.
Any preferences on receivers? Would not want to break the bank, say $1500-$1,750 on the receiver.

I would run a limited amount of cat 6 and get a mesh wireless network for the rest. I run 5 Smart Tv's and 6-8 devices off of my Amplfi HD mesh system with no problem.
