Those who actually knew Jesus would not have known Greek. Anything they said or wrote down would be in Hebrew/Aramiac. Scholars writing it down many years after Jesus's death wrote it down in Greek.

Greek was the common language, even moreso than Latin. Everyone knew a few words and phrases, and educated people, like Saul/Paul, would have been fluent.

Another poster stated it already, but Greek was the English of the old world.
Additinally, Aramaic is a melodic language by design, in order to better memorize such stories for spoken word. That spoken word was first transcribed in Ancient Greek.
