It's a Christian school. A secular preschool offers babysitting and acclimation to the school environment. A Christian school offers that plus Christian values, and being a porn star is inconsistent with that. They would be defrauding the parents by allowing her to teach there while actively engaging in a profession that is incompatible with Christian values.
They were even willing to overlook her past, as long as she committed to an acceptable code of conduct in the future.

They didn't make her sign anything. She chose to sign it to get the job she wanted.
